1oz Lime Juice

3/4oz Simple Syrup

1Egg White
Instructions

Dry shake pisco, lime juice, syrup, and egg white (no ice) for 10 seconds.

Add ice and shake vigorously for another 15 seconds until frothy.

Strain into a chilled sour glass.
